what does "raw" mean? Where does the name Raw monje come from?
Raw desserts mean foods that have not been cooked above around 115 degrees. Many of the items we currently offer are considered raw, meaning they are not baked and so the nutritional value of the ingredients are intact. Some of the ingredients are not raw. All of our products are made of plant-based ingredients including fruits, nuts, coconut milk and oil, adaptogenic herbs (Adaptogens improve the health of your adrenal system, the system that's in charge of managing your body's hormonal response to stress) and superfood powders. Everything is completely natural and dyed with plants and Earth-based ingredients. Raw: being in or nearly in the natural state: not processed or purified; in a natural, unrefined, or crude state. The name “Raw Monje” comes from a combination of the word Raw and Monica’s nickname, Monje, based off of the Italian “mangiare: to eat.” The word monje in Spanish, pronounced differently, means “monk.” While our current products are mostly raw (hence the name), we envision a more authentic world where people show up in their purest and real forms and so the name has a double-meaning.
are the ingredients organic?
Yes, nearly all of our ingredients are organic, locally sourced where possible and non-GMO. Any non-organic ingredients used will be labeled or you will be notified. All ingredients are listed so that you are aware of what you are putting into your body. We have hand-selected ethically-responsible suppliers who have the same integrity as we do. They regularly test their ingredients for purity and source and support people and communities across the globe. Yes, organic is currently more expensive. We're firm believers in "Pay the farmer now or the doctor later." Especially where chocolate is concerned, eating and supporting organic is better for everyone.
how long do they keep?
Most of our products are frozen or need to be refrigerated for storage. Fresh flowers, berries and herbs on decorated cakes will last 1-2 days in the refrigerator. Standard items will keep in the fridge for a week or sealed in the freezer for 4-6 weeks or more. We don’t know how much longer because they’ve never lasted that long!
Raw Truffles may be left out, but they will soften. They should be kept cold, up to 10 days in refrigerator, otherwise please freeze in an airtight container for longer term storage. The glass containers may be frozen for short-term. Please reuse the jars or return them to us.
Raw "cheesecakes” including mini cupcakes: with fresh fruit toppings: 1-2 days in refrigerator, standard: 1 week in refrigerator, 4-6 weeks in freezer.
Donuts: 1 month unrefrigerated, 2 months in refrigerator.
What do you use for sweeteners?
We use fruit, honey (not in vegan treats), brown rice syrup, pure maple syrup, dates, bananas, lucuma powder and coconut sugar. Our current wholesale product line is 100% plant-based and vegan and does not use honey, but we do currently use honey in a few cheesecake flavors. While our desserts do contain sugar, we do not use refined white sugar or artificial sweeteners in any of our recipes. In some cases, we can also substitute other diabetic-friendly sweeteners for an extra cost if we have advance notice.
are they gluten free + vegan? WHat about nuts? are they kosher?
Gluten Free: Our kitchen is 100% gluten-free as are all the ingredients. Our suppliers are carefully chosen. We are located in separate kitchen in a shared building with our own heating and cooling. We use certified gluten-free oats in our Energy Bites and Energy Donuts.
Vegan: Our current wholesale product line is 100% plant-based and vegan and do NOT use honey. Dairy free and vegan products are always labeled and ingredients listed on our website. We do use honey in our seasonal Beet Honey “cheesecake.” If you are custom ordering, you can sub out the honey. Please refer to the ingredients on the product description or ask. We envision a world that operates with plant-based options for anyone, but we also know there is a need for delicious and gluten-free/corn-free items, which is not always an easy feat. We always label any product that uses anything other than plants. Our main ingredient’s supplier is completely vegan and peanut-free. Here is the statement from our chocolate supplier. This is the chocolate we use in our tempered hard chocolates (not our raw chocolates or other chocolate items): “Our Fair Trade/Organic Dark Chocolate Couverture (all %) can be considered suitable for vegan diet since no animal-based ingredients are used in the manufacturing processes. However, please be aware that these products are manufactured in a facility that handles milk and dairy products and that we have not applied to any Vegan Certification Program.”
Nuts: Many of our recipes use nuts and a few use peanuts. We always use clean equipment after handling peanuts, but we are NOT a peanut-free or nut-free facility and we don’t have separate equipment. Our recipes rely heavily on nuts and so we cannot accommodate severe nut-allergies at this time.
Kosher: We are currently working on getting Kosher certified.
Most of our products are also free from soy, corn and refined white sugar. Some small toppings on custom items may include processed organic sugar, but we always notify you if there’s any regular white sugar.
